Recipe tips
Avoid tearing the meat slice. If the slice is already thin enough, there is no need to beat it, just push a little with your fingertips.
The meat will be thin enough to fry thoroughly.
1. Slice the pork loin in very thin slices, then beat them with a meat beater.

2. Sprinkle with salt and pepper and let it stay for at least one hour.

3. Beat the eggs and prepare the flour in a separate dish.

4. Dip the escalope (slice of meat) into the flour, then into the egg, then repeat the procedure.

5. Fry the slices in hot oil until well done on both sides.

6. Serve warm with mashed potatoes or mixed vegetables.

Variations
Fried sirloin with breadcrumbs

After dipping into the flour and the egg, we also dip the slice into breadcrumbs. Then we fry it in hot oil.
This will provide a crunchy taste to the schnitzel.
