Recipe tips
The best is to make gnocchis of the same size and to boil for a very short time. Then dry very well on kleenex/kitchen roll.
1. Put the water on low heat and add the butter. When the butter has melted add flour and stir quickly until the pastry doesn't stick to the walls of the pot. Keep stirring for another minute, then take off the heat and add the eggs one by one while stirring. Add salt and nutmeg and stir well.

2. Boil water in a pot and add salt. Put the pastry in a pastry bag and make small pieces of pasta and drop them in the boiling water. Boil for 2 minutes, then take them out and place on a kleenex/kitchen roll to dry. After that put them in a buttered heat resistant dish, add the bechamel sauce and grate some cheese on top. Put in preheated oven (180°). Cook for 40 minutes and serve warm.
