Recipe tips
Any kind of hard cheese will do.
1. Melt the butter over low heat, add the flour and stir for 1 minute.

2. Then pour milk, add salt, white pepper and stir on low heat for another 2 minutes.

3. Finally, grate the cheese and add it to the sauce. You will get a thicker sauce. Serve with pasta.

Variations
Butter sauce
Boil the mixture of butter, flour and milk for 10 minutes and then add 150 g of butter. Pass through a sieve and serve warm.
