Recipe tips
Any kind of hard cheese will do.
Mix the butter and flour, add a considerable quantity of salt and as much sour cream as to get a very soft pastry. Roll it out to 0.3-0.5 cm, the thinner the pastry is, the crispier the cookies are. Beat the egg and glaze the pastry.Then grate some cheese on top. Cut small squares with the dough scraper and place them on a buttered baking pan. Cook in preheated oven (200°) for 10 minutes the most. To prevent drying, keep covered or in a plastic bag.
